I want to set it straight right now that I am not a cook. I am the farthest thing from a cook and it still requires a lot of energy for me to get in the kitchen and do something. With that said it has been my dream since I got married to cook for my family (before I lived a single life of eating whatever I could get my hands on).

This new section is for all the mamas out there that feel the same way – they want to cook for their family but never got around to collecting the skills really to cook on a normal basis.

For Christmas this past year my MIL, who is an amazing cook, got me the Instant Pot Lux. I was super excited about this gadget since I saw it on the Target shelves and started to do some reading. It looked like the perfect match for my non-cooking skills. Fast forward 5 months and I use the Instant Pot 2+ times a week to make dinner. We went from a family who did a lot of Mac & Cheese and other box dinners and eating out to one that enjoys home-cooked meals almost every night.

The Instant Pot is a modern pressure cooker, multi-cook kitchen gadget. From their official description, “Instant Pot is a smart multi-use Electric Pressure Cooker designed with the objective of being Convenient, Dependable and Safe. It speeds up cooking by 2-6 times making it extremely energy-efficient, while, preserving nutrients and preparing healthy, tasty dishes. During cooking the microprocessor monitors pressure, the temperature keeps time and adjusts heating intensity and duration. Even the volume of food is taken into consideration, all greatly improving cooking results and consistency of the dishes.” It is pure amazing for the novice or experienced cook in my view.

There are different flavors of the Instant Pot and they range from about $80 – $150. The lower end Lux has 6 programmable functions and is a great option on a lower budget. The higher-end Ultra has more bells and whistles with its screen and programmable functions. It also features a yogurt maker which is really awesome. If you have already done some research on the Instant Pot or you might already have one, you might be asking why is this novice doing her own push on recipes when there are so many out there. The truth is because as I said before I am not a cook and if anything I am becoming a super lazy cook. I scour the Internet and all those fancy recipe blogs for super simple no-fuss recipes. My goal is to show my variations or collect them here in one place. I have slowly become more courageous and started modifying recipes I find, always to make them simpler, and want to share those special creations. If I have modified a recipe I will always link to the original so you can compare and get multiple outlooks.
